The whitewashed façade of Villa Ambrosia feels like it has been hewn directly from the surrounding granite. The pastel blue shutters and wooden pergolas nod to the cafés which line the beachfront at Psarou, just down the road. The elegant white sofas, meanwhile, are more reminiscent of the luxury beach clubs of the island’s capital. The first rays of the rising sun poured in through the enormous arched windows, lighting up the lounge. The sand-colored floor and huge woven rugs warm the minimalist, monochrome design scheme. The crisp white walls are punctuated in the bedrooms with natural stone features. When night falls, the spotlights tucked away in the wooden ceilings lend the interior a nautical feel as they illuminate the contemporary artworks that adorn the walls. Hop out of bed early and head down to Psarou for an iced coffee on the beach. Later, rent a jet ski or paddle board for an excursion on the still waters of the Aegean Sea. Back at the villa, stretch out by the infinity pool to watch the town light up as the sun sets over the Kalafatis peninsula.
